The name sounds a bit odd but believe me they have a sweet and savory flavor that goes with about any meal. I even like eating them without a meal too. One of my sons absolutely detest onions and even he enjoys these muffins.
The batter will be similar to cookie dough, fill mini muffin tins about 3/4 full.
The meal pictured below was a wonderful and tasty meal. Doesn't it look delish!? I made the muffins and my daughter Molly, made the main dish. It's called Chicken Penne Pasta. Sweet Onion & Walnut Muffins
1 1/2 cups all-purpose flour
1/2 cup sugar
1 1/2 tsp baking powder
1/2 tsp salt
1 cup finely chopped onion
1/2 cup butter, melted
1 to 1 1/2 cups chopped walnuts
Combine the flour, sugar, baking powder and salt in a bowl. In another bowl, whisk eggs, onion and butter until combined, stir into dry ingredients just until moistened. Then fold in walnuts.
Filled greased or paper-lined miniature muffin tins 3/4 of the way full. Bake at 400 degrees for 10-12 minutes or until toothpick inserted in middle comes out clean. Cool in pan for about 5 minutes then remove to wire rack Makes about 3 dozen mini muffins.
Even if you think this recipe sounds a bit on the odd side, give it a try. They're super simple to make and the flavor is surprisingly great!
